Meet 321 Coffee barista, Emma, as she walks through our method for the perfect cup of Chemex coffee.
Supplies
Chemex
Paper Filter
Scale
Grinder
Kettle
Coffee
Water (filtered, if possible)
Ratio
1 gram of coffee for every 17 grams of water
Recommended: 20 grams of coffee for 350 grams of water (Makes 12 oz. of Coffee)
Grind Type
Medium to Medium Coarse

Steps and Preparation
Step 1
Weigh or measure the desired amount of coffee
If you don’t have a scale, 1 tablespoon of coffee beans or ground coffee is about 5 grams of coffee.
Grind the coffee to medium or medium-coarse consistency
Heat an appropriate amount of water to 200 - 205 degrees
If you don't have a kettle with a thermostat, you can boil water and then let it cool for 30-60 seconds
Step 2
Open the filter and place the filter so that the side with triple thickness is placed against the spout. Rinse the filter with hot water and discard the water.
Step 3
Add ground coffee to the filter and level the grounds.
Step 4
Begin by blooming your coffee. Pour a small amount of water, 3x the amount of coffee used, in a circular motion over the coffee grounds and let stand for 30 seconds.
Slowly pour more water over the grounds using a circular motion. Keep the water level below the top of the filter. Aim to dispense half of the remaining water you intend to use.
Step 5
Continue pouring the remaining water over the grounds. Allow all of the water to drain from the filter. For this pour, aim to dispense the remaining half of the amount of water you intend to use.
Step 6
Once the coffee has finished brewing, discard the filter and grounds. Enjoy.
